It may not be authentic, but Richard doesn't care! This gluten-free carbonara features a creamy two-cheese sauce and crispy bacon for a quick, lo-carb dish perfect for an indulgent weeknight meal.

  • 4 slices bacon (thick-cut, or other salty pork)
  • 2 tablespoons kosher salt (for pasta)
  • 1 pound gluten-free pasta (quinoa spaghetti, tonarelli, or bucatini)
  • 3 large egg yolks
  • 1 cup heavy cream
  • 1 cup pecorino romano cheese (grated, for sauce)
  • 2/3 cup Parmesan cheese (grated)
  • 1 teaspoon freshly ground black pepper (for sauce)
  • 1/4 cup white onion (sliced thin)
  • 1 1/2 cups fresh peas (or frozen, thawed)

    Tasted great. You could add about a 1/4 cup of more cream if you wanted a more 'wet' sauce.

    Delish!! 😋 I’d probably try the quinoa pasta, I tried it with the brown rice pasta and is a bit chewy. Otherwise very hearty and cheesy!👌🏻
