As close the Panera soup as it gets! Careful not to heat to high or will be grainy. Family loved it!

Absolutely delicious and really easy to make best part is that you don’t have to cook it all day. I added paprika and I seasoned once when I put veggies in, again while simmering and the after the cheddar went in. Topped our bowls with a sprinkle of cheese, croutons and bacon bits 😋will be making again

Delicious, I did make it with velveeta cheese and sharp cheddar!! And substituted the chicken stock with vegetable! Will definitely make throughout the cold winter days!!

I worked at Panera for 10 years and this recipe was a perfect recreation. Do NOT skip the nutmeg, it’s not optional. And make sure you have the right amount of salt to tie this together.

I decided to double this for our family of 6, after I already added everything but the cheese. I didn’t have extra broccoli, so I just used the two crowns and about 3 carrots as the original recipe called for. I think that was plenty even with the extra liquid. I did use oat milk in place of the half and half so it was a little runny as expected. I had to make the butter/flour mixture about 3-4 more times for the right consistency. I also used an immersion blender for some of it but left it a little chunky. I didn’t measure the cheese. It’s still simmering on the stove but I sampled it and it tasted really good! I can’t wait for the rest of the family to have some! They keep stopping by asking what’s for dinner ☺️.
I also forgot to mention that I did precook the broccoli and carrots in the microwave after seeing someone mention they don’t cook well in the soup if they are raw.
Husband said this was the best broccoli cheddar soup he’s ever eaten ☺️🥰. Will definitely be making this again!

The carrot was a bit overwhelming - I’ll have to add less next time. Other than that, I loved this recipe!

Horrible. I tried it and gaged. I followed all the directions and everything and it was nasty. It wasn’t grainy or anything but very gross

soup came out amazing! i made mini garlic toasts with it and it was perfect!

I used heavy cream and no flour and added Chile powder and garlic and it was great

Made it and was happy with it. Of the three members of my family two are on diets that this recipe goes against. They tried it and came back for full seconds and excused it as their “cheat” days. If you aim to please your family or company this is a great dish to add to your meal plans. This will be a regular recipe for me.

It was good. I didn’t add nutmeg and used fat free half and half. I think I’ll try different cheese next time.

You’ll need to steam your broccoli first. Not too much. It will cook some in the pot but it won’t cook through if you add it raw like the directions say. Also, to avoid the grainy texture, cook your soup low and slow. If your heat is too high the cheese won’t melt properly and you’ll get a grainy texture. Taste your soup as you go. When it comes to seasoning, kosher salt is always best.

flavor is amazing but, despite making this several times now, it Always comes out a bit grainy. I can't firgure out why. Has anyone else run into this problem?

Very easy but very bland definitely will add some spices next time. My family still ate it up.
