Loved it. Used frozen Cauliflower rice, steamed on the stove (add salt to your water like you do for your pasta). Added garlic powder, onion powder, pepper and butter for the grits when in the processor; I cooked the shrimp in coconut oil, seasoned it and used the remainder of oil in the pan to cook summer squash, zucchini and mushrooms. Grits would be good with either a hot sauce or a red pepper sauce.

This is a great dish. The cauliflower grits is a very healthy alternative to regular grits. The shrimp was delicious!
