  • 1 red bell pepper (seeded and chopped)

  • 2 cups long-grain white rice (such as basmati)
  • 1/2 tsp. saffron threads (optional)
  • 4 cups chicken broth
  • 2 lb. clams (small, such as little neck or Manilla, scrubbed)
  • 1 lb. large shrimp (peeled and deveined)

    Wonderful, I added a fresh fillet of Cod to steam on the top when cooking in the rice. When ready with the Shrimp, Clams, and Mussels the fish had “melted like butter”; it was marvelous. Loved by all! Just an FYI, I served as Appetizers... Lobster Cucumber Shooters and Watercress (open-face) On Prosciutto Wrapped Mozzarella Discs. Great combo for the meal.
