Making a curry was never easier thanks to the wonderful consistency of cream of mushroom soup! This foolproof version is on the table in less than an hour!


  • 1 1/4 lb. boneless, skinless chicken thighs
  • 2 Tbsp. olive oil
  • 1 Tbsp. curry powder
  • 1 can Campbell's® Condensed Cream of Mushroom Soup (10 1/2 ounces)
  • 1/2 cup milk
  • 2 lb. sweet potatoes (peeled and cut into 1-inch pieces, about 4 cups)
  • 8 cups spinach (or kale, loosely packed)

    I needed to add more liquid, and I added more curry powder as well, but overall we enjoyed this dish. It was my first at-home curry and it was easier than I expected. It’s a flexible recipe and I will definitely make this again!
