I change the recipe a little bit to adapt to what I had in the refrigerator. Instead of sweet potatoes I used fingerling potatoes sliced and cauliflower that I mixed in olive oil and salt and pepper. I baked those for 20 minutes before adding the cod and vegetables. My vegetable mix included mushrooms red onion zucchini squash and whole cherry tomatoes. I garnish with parsley and a squeeze of lemon juice. This was extremely delicious I had to be a little creative with the spices since I didn’t have exactly what was in the recipe but the card turned out perfectly and all of the vegetables are perfectly cooked and seasoned the whole meal goes together like a marriage.

Great recipe! I made it with trout & added portobello mushrooms. I will be making again, but without zucchini (the kids aren’t a fan).
