  • 3/4 cup oat flour (you can make this by pulsing rolled oats into a food processor or spice grinder until finely ground; 1 cup of oats yielded 3/4 cup oat flour for me)
  • 1 cup all purpose flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 3/4 tsp. coarse salt (or Kosher)
  • 3 Tbsp. unsalted butter (melted and cooled slightly, plus extra for the pan)
  • 1 1/4 cups whole milk
  • 1 cup oatmeal (cooked)
  • 1 Tbsp. honey (unsulphured, not blackstrap molasses or 1 tablespoon)

    They turned out fluffy and sweet! Amazing recipe. I also added some protein powder, which added a lot of flavor and made them a perfect snack before the gym!

    Everyone loved the pancakes. I did add 1 banana, 1tsp of vanilla and 2 tbsp of Fage greek yogurt. It gave the recipe more flavor.

    Great flavor but mine didn’t turn out fluffy, but they were absolutely delicious!

    These turned out super yummy! My kids even ate them with no complaints and that’s saying a lot! I did use one egg verses two and a little more oats and flour because I only had one egg and added the extra oats and flour to make the batter thicker as it was extremely runny.

    Excellent! I Batter was a little thick. Next time I’ll allow the cooked oatmeal to be a little more moist when I take it off the heat. Added some milk to desired consistency being careful not to over stir. The end result was very good; they were denser than all-flour pancakes but still fluffy. (I know this seems contradictory, bit it’s true!) We had fresh blueberries and real maple syrup for toppings. Definitely will keep this recipe and share with friends!
