I used oil instead of butter and plain flour instead of cake flour. I found that it was really easy to roll the cookie dough into balls before baking them, which I really liked because usually the cookie dough is so sticky and you have to refrigerate it for a bit, which takes time, and I want to eat cookies :) .
It was really tasty, but the only issue was that it was crumbly. I'm not sure if it was because I didn't use butter or cake flour. Maybe if you add milk into the recipe it could help?

My cookies turned out thick and rather dry, more like shortbread… I subbed all purpose flour for cake flour, not sure if that was the culprit.
