    I made this because I had fresh mushrooms and leftover asparagus. I substituted the Arborio rice for sushi rice that was also on hand. It turned out fine, but some burnt to the bottom of the pan. I think a little oil or non stick spray would have helped.

    This was my first time making mushroom risotto. I didn't have asparagus, lemon juice or yeast, but it turned out pretty good. It needs a little more flavor, maybe soy sauce or something.
