  • 2 Tbsp. butter
  • 2 cups mushrooms (flavorful, such as shiitake, chanterelle, or oyster mushrooms, cleaned, trimmed, and cut into half inch to inch pieces)
  • 2/3 cup brandy (vermouth, or dry white wine)
  • 6 cups chicken stock (*, use vegetable stock for vegetarian option)
  • 1/3 cup shallots (peeled and minced, OR 1/3 cup of yellow or white onion, finely chopped)
  • 1 3/4 cups arborio rice (or other risotto rice)
  • 1/3 cup grated Parmesan cheese (freshly)
  • salt
  • freshly ground black pepper
  • 2 Tbsp. fresh parsley (chopped, or chives)

    So good!! Mixed it up with a shot of whiskey instead of the wine. Controversial but it turned out so good. Will definitely be having to again. Such a nice warm winter dish.

    Easy to make, very delicious. This is the best risotto recipe I’ve tried and the only one I use now. I used vegetable broth instead of chicken (I’m a vegetarian) it was perfect. Highly recommended.

    Didn’t have Parmesan so used the Pecorino in the fridge; the meal turned out great anyway. I’ll definitely make this a regular treat

    Everything turned out except that it had a sweet taste-maybe because I used brandy? Didn’t really like the sweetness in it

    Yummy! Made a couple times now. Replaced the white wine with Marsala this time. Turned out great. Don’t rush the process and you’ll get the perfect amount of al dente.

    Very tasty! I used vegetable broth and cut the recipe in half. I did not have the Parmesan cheese but it was still very creamy.
