  • 1 cup rice
  • 2 cups chicken broth
  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 onion (small, diced)
  • 4 cloves garlic (minced)
  • 1/4 cup tomato paste
  • 1 Tbsp. lime juice
  • 1/2 cup cilantro
  • 1 Tbsp. cumin (You can use less if you prefer, I just like the flavor.)
  • salt (to taste)

    Awesome. Better than any mexican restaurant I ever ate at. I added a green pepper, 1 Tablespoon of Spanish paprika, 1 teaspoon of ground cayenne pepper and two diced roma tomatoes. Really good!

    My family and I love this rice. We do not use the lime juice and we sauté the onions, garlic, and tomato paste first then mix it with the rice before the rice is cooked

    Turned out fantastically. I rinsed the rice and browned it in some olive oil before I cooked, and I had to add some sugar at the end because my aromatics turned out too acidic. Would definitely make this one again.

    Turned out better than any Mexican restaurant rice I have ever had - and I live in Joliet, IL which is home to a huge Latino population. I did add a bit more tomato paste than recommended but I think it added to the overall brightness of the dish.

    Love this. It is so delicious. I have tried other recipes and this by far is the best. The lime juice makes a world of difference

    This is the second time I’ve made this, and I’ve made one change to the procedure: toast the rice in the melted butter til golden, THEN add the chicken broth. This makes the rice less sticky when finished. Excellent flavor!

    Amazing. I added a cube of consumate tomato concentrate along with the tomato paste. It’s labor intensive but fantastic end result.

    Excellent. I didn’t add the Cilantro because I can’t stand the smell but it was amazing. I made it twice even.

    This turned out great! I made my rice in a rice cooker, so I didn't have any issues with the rice being too gloopy. The texture was perfect, with each grain distinct. I'm already thinking of more spices to add on my next batch - maybe some smoked paprika, Mexican oregano, bay leaf? Definitely added cayenne pepper because I like it spicy. All in all, it's a good starting point for Mexican rice, and I'm excited to figure out what to add to make it more customized.

    Hmmm, this was bad! Too much cumin (and I like cumin!) and just too wet, more of a risotto. There’s better recipes out there. I had to make a whole new batch of rice and scoop in the old mush. Thankfully that saved it..

    very nice, soaked some prawns in margarita, garlic and chilli for an hour and added to the rice mix. worth doing again
