Description
Substituting chorizo for some of sloppy Joes' ground beef is a simple way to add tons of flavor. When shopping for this recipe, look for soft Mexican-style chorizo, which is raw and needs to be cooked, as opposed to firmer Spanish-style chorizo. The recipe is a Yummly original created by Jill Silverman Hough.

- 8 oz. lean ground beef
- 8 oz. mexican chorizo (pork sausage, casings removed)
- 1 medium onion (chopped)
- 1 medium green bell pepper (chopped)
- 2 medium carrots (chopped)
- 4 garlic cloves (minced)
- 1 can diced fire-roasted tomatoes (14.5 oz.)
- 1 cup chicken broth
- 1 can pink beans (15.5-oz., rinsed and drained; or pinto beans or kidney beans)
- 1 Tbsp. chipotle chili powder (or more if you like spicy food)
- 1 Tbsp. tomato paste
- 1 tsp. ground cumin
- 1 tsp. salt (plus more to taste)
- 4 hamburger buns (split; or 6 buns to serve 6 people)
- 2 Tbsp. cold water
- 4 tsp. cornstarch
- 2 Tbsp. fresh lime juice
- hot sauce (such as Crystal or Tabasco, to taste; optional)
- 3/4 cup sour cream (for serving)
- fresh cilantro sprigs (for serving)

Directions
- Cook beef and chorizo in a 12-inch frying pan over medium-high heat, breaking them up, until barely cooked through, about 5 minutes. Add onion and cook, stirring occasionally, until slightly softened, about 3 minutes. Add bell pepper, carrots, and garlic and cook, stirring occasionally, until vegetables are crisp-tender, about 5 minutes.
- Stir in tomatoes (with their juices), chicken broth, beans, chipotle powder, tomato paste, cumin, and 1 tsp. salt, scraping up any browned bits in the pan. Bring to a boil and reduce heat to a simmer. Cover and cook, stirring occasionally, until vegetables are tender, about 15 minutes.
- Meanwhile, preheat the broiler with a rack 4-6 inches from heat. Arrange hamburger buns, cut side up, on a sheet pan. Toast until lightly browned, 2-3 minutes.
- In a small bowl, combine water and cornstarch. Add cornstarch mixture to beef mixture and cook, stirring, until sauce thickens, 30-60 seconds. Add lime juice. Season to taste with hot sauce and with more salt if you like.
- Open up each bun on a plate. Top with sloppy Joe mixture and then with sour cream and cilantro.
