Delicious!!!
I used frozen corn and roasted in my cast iron skillet to char a little.
Double the spices like other user recommended. I’m not a spicy fan so omitted the jalapeño and sriracha.
This will be in my summer rotation.

Great recipe I switched the Sriracha for a can of Chipolte in adobo that I puréed

yeah it's good. I wouldn't say amazing, but its good. I like more lime and more zest. It's been sitting melding together for a couple of hours so I am hopeful. I roasted the jalapeño and diced it nice for more flavor. Could be a bit more spicy, but I'll add some hot stuff to my bowl as to not make it too much for others. I do like the idea of this one. I'll have to put my spin on it next time! I'd say for sure give it a go.

This was AWESOME!!!! I like things spicy, so I added more jalapeños. I also mixed grilled corn on the cob with skillet corn. GREAT flavor!!!! New side fish favorite!!!!!

This is good! The dressing is 20/10. I used canned corn - definitely would have been better with grilled corn.

double all the spices, siracha, and jalapeno and it would be 5 stars. Perfect way to spice up your regular pasta salad go to. Will make again.
