- 1 Tbsp. olive oil
- 1 yellow onion (chopped)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 lb. lean ground beef (or swap ground chicken or ground turkey)
- 2 Tbsp. chili powder
- 1 1/2 tsp. ground cumin
- 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne pepper
- 2 cloves minced garlic (about 2 teaspoons)
- 1 cup plain nonfat Greek yogurt
- 1 can refried black beans (reduced fat, 15 ounces)
- 3/4 cup grated sharp cheddar cheese (freshly, divided)
- 3/4 cup grated mozzarella cheese (freshly, divided)
- 10 oz. tomatoes (with green chiles, such as Rotel - well drained; use mild or medium depending upon how spicy you’d like the casserole to be)
- fresh cilantro (for serving)

I felt the recipe was missing some key ingredients like corn or seasoned black beans instead of refried.
I added corn, drained black beans, and Spanish style rice with sour cream instead of Greek yogurt. Delicious!

it was absolutely delicious. I ended up using turkey meat that was taco seasoned since I had it in the refrigerator, but still used the other seasonings too a little less. I also messed up the layering but it still tasted great! I put the meat, pinto beans, cheese, tomatos then cheese again. Also, used sour cream instead of Greek yogurt.

Loved it! I don’t care for refried beans so I substituted black beans and used ancho chili powder. I also used a combination of quinoa and rice. Definitely will make again.

It’s really very tasty. I just feel like it needs more veggies. But what to add?
