  • 4 cups romaine lettuce (roughly-chopped)
  • 1 cup tortilla strips (fried, homemade* or storebought)
  • 1/2 cup cilantro leaves (chopped fresh)
  • 1/3 cup pepitas (toasted,  , hulled pumpkin seeds)
  • 1 avocado (peeled, pitted and thinly sliced)
  • 1 batch caesar dressing (Greek Yogurt,  , which I recommend making with lime juice, instead of lemon juice, for this recipe)

    Super good salad. Recommend buying baby Kale as this is more tender than regular Kale. The ingredients are such a yummy mix. May add a tablespoon of milk to the dressing as it is a bit thick, but following this recipe exactly is definitely going to seal compliments!

    The key to this is the lighter but very tasty Caesar dressing. Toasted tortilla strips add nice color and texture, and the mix of kale with romaine works well. Grilled some shrimp on skewers to add protein—it was a satisfying meal. Even the kids loved it.
