It's a taco hot dish. Tasty, but could use some sort of crunch so served with tortilla chips (which obviously means its no longer low carb).

Great! I added more onion, bell peppers, and 2 extra eggs! Our entire crew loved it! I’ve made this many times before, but have found adding the bell peppers etc makes it even better ! I live on a low carb diet; this is by far one of my favorites!! Thank you , yummly!!

Big hit! I didn’t add salsa with the hamburger instead used it as a side. I also didn’t add jalapeño but added more onion. So good!

Really good. I used Rotels instead of salsa. I just dumped a whole can in there. I omitted the hot sauce too. I measured the cheese with my soul. Will definitely make again!

The Low CarbTaco Casserole was good, as low carb recipes go. I omitted to egg, hot sauce, cream topping. Just did not sound appetizing to me. As a result the casserole was like loose meat. It was nicely spicy, which is what I was looking for. In addition to the onion and jalapeño, I added minced garlic to the recipe, which enhanced the flavor. I also used Muir Glen Medium Salsa, also increasing the heat. I would make this again.

Super yummy! My whole family loved it! Next time I will either double the recipe or add cauliflower “rice” to make it stretch further. We are every drop and probably could have eaten more (Note: we are two adults, a 7 year old, a 4 year old, and a 1 year old). I would say it’s really closer to 4 servings than 6. Delicious!

This was good however I wanted more texture. We served this casserole over a salad. Still craved a crunch factor...I will make this again but need to figure out how to add some crunch!

Really easy to make. Not many ingredients and takes about 40 minutes. Very tasty.

This turned out delicious! We put the left overs in a quesadilla for lunch the next day and was just as good the second time around!

Even the almost 2 year old loved it! Skipped the jalapenos and salsa in the meat but still very flavorful and delicious! Would double the recipe next time so there's more leftovers.

this was fabulous! everyone including two three year olds and picky husband ate it and enjoyed it. we ate it with tortilla chips because we don't do low carb 😉
