Description
These emerald green cupcakes contain a healthy surprise bonus: spinach puree in the batter! The secret is safe, though, because what you taste is the flavor of fresh lime juice and zest. Key limes (aka Mexican limes) are especially sweet here, but regular grocery store Persian limes work well too. The recipe is a Yummly original created by Ashley Strickland Freeman.

Directions
- Preheat oven to 350°F. Line 18 cups in muffin pans with paper liners. Measure thawed, undrained spinach; you should have 1 cup packed (save any extra for other uses).
- Make cupcakes: Puree thawed spinach and its liquid and the oil in a food processor or blender until very smooth, stopping to scrape down the sides as needed, 1-2 minutes. Set aside.
- In a large bowl, beat butter and granulated sugar on medium speed with a mixer until creamy. Add eggs 1 at a time, beating after each addition until the yolk disappears. Beat in vanilla, 1 tablespoon lime zest, 3 tablespoon lime juice, and the pureed spinach. Mixture will look curdled.

This was just okay. The frosting was excellent and the best thing about the recipe, but it was not enough to disguise the taste of the spinach.
