  • 3 tsp. sesame oil (divided)
  • 1 Tbsp. olive oil (light flavor)
  • 3/4 cup onions (thinly sliced)
  • 2 carrots (medium size, very thinly sliced into 2" matchsticks)
  • 2 cloves garlic (minced)
  • 3 stalks green onions (cut into 1" lengths)
  • 1/2 cup crimini mushrooms (thinly sliced)
  • 1/2 lb. spinach (washed and drained well, I used a large bunch of Japanese spinach, stems removed and chopped bite size. Baby spinach leaves would work as well.)
  • 3 Tbsp. soy sauce
  • 3 tsp. sugar
  • 1 Tbsp. sesame seeds (optional)
