  • 3 bell peppers (small, cored and diced , I used a mix of colors)
  • 2 celery (ribs, chopped)
  • 1 white onion (small, peeled and diced)
  • 1 jalapeño pepper (*, seeded and finely chopped)
  • 4 cloves garlic (minced)
  • 6 cups chicken stock
  • 1/4 cup flour
  • 28 oz. crushed tomatoes
  • 1 cup brown rice (or uncooked white)
  • 2 Tbsp. Cajun seasoning (** , add more/less to taste)
  • 2 bay leaves
  • 1 tsp. dried thyme (crushed)

    I made this soup a couple of weeks ago and thought it was fantastic. The guys at my club did too, as I took second place with it in a soup cook-off there.

    I love this recipe! It takes in to account every flavor and helps to bring it to life: I do add additional veggies, including okra - just to give it a little more heft. But it is a really great dish and one of my favorites.
