soup was amazing...i made a half ground chicken half sausage meatball and it came out perfect...also added some other veggies i had on hand and it gave it a great flavor! some turnips and zucchini..

Delicious! I did half beef/half turkey meatballs and threw in some chopped spring mix we had in the fridge.

Delicious! Sautéed carrots with garlic and EVOO first for more flavor. Also, added another container of chicken stock to the soup. Very tasty. If you use a Dutch oven it cuts don’t the cook time, too.

I used Swiss chard instead of escarole. I needed to add a bit more salt than the recipe called for but it turned out delicious! I think I'll add a few red pepper flakes next time. Very comforting and filling. This soup will be in constant rotation this fall/winter/cold/flu season.
