    I made them directly in a cast iron skillet in the oven, turning half-way through, and they turned out fine. Enjoyed the roasted taste and combination of ingredients.

    This was a big hit, it was devoured immediately! Served with sour cream and chives, and a side of guacamole. The potatoes were crispy on the outside and creamy on the inside. Will definitely make again.
