    We were not a fan of this recipe. The dish came out flavorless with some vegetables overcooked and others undercooked (eggplant). The concept is great and I like the idea of using a instant pot but the execute falls short on texture and flavor.. This was a miss for us and will not be a repeat recipe. Next time I make a true Ratatouille in the oven.

    This turned out so well. I added bay leaves and red chili flakes and white onions and bell pepper. also garlic pepper salt. Honestly, anything in my pantry and it was perfect with some cheese and barley.

    This was shockingly delicious. I've made it twice and served it on pasta, No extra sauce required, cheese optional. So good!
