  • 1 onion (large, diced)
  • 1 lb. mushrooms (sliced white, crimini and/or a mix of wild mushrooms like chanterelles)
  • 3 Tbsp. flour
  • 1 Tbsp. paprika
  • 3 cups chicken stock (vegetable stock, or bone broth)
  • 3 Tbsp. soy sauce
  • 1 cup 2% milk
  • 1/2 cup sour cream
  • 1 Tbsp. lemon juice
  • 1 Tbsp. fresh dill (chopped, or 2 tsp. dried dill)
  • 1/4 cup fresh parsley (chopped)
  • salt

    Very tasty recipe. Quite different to the usual mushroom soup flavour due to the paprika and soy. I only used 1 tble soy and found it sufficient. Might have been too salty otherwise. Used less flour too. Will make again.

    Very rich and flavorful. Would 100% make this again. Didn’t stray far from the recipe and was terrific. I had planned on adding porcini mushrooms but forgot to buy them but the mushroom flavor was rich without it.

    I made this with a slight adjustment. I added a bit of ginger to it and skipped the soy sauce but instead added a bit of Worcestershire sauce. Absolutely lovely
