Yummy, quick and easy! Doubled the recipe and made it exactly as written. Everyone loved it!

pretty good. i usually add the salsa in the pan, make two holes for the eggs, then crack the eggs in the holes.

Use 1-3 cans black beans (adjust seasonings accordingly), depending on how much want. Can make extra ahead of time for multiple meals. Need to add a little water when pureeing in FP. Then heat up in a pan. Use the smaller size flour tortillas and just warm in oven. Also added shredded Monterey Jack cheese, mild red enchilada sauce, salsa, squeeze of fresh lime, and a sprinkle of cilantro and shredded lettuce over the top to taste. Hot sauce to taste. Can of Goya vegan rancheros refried beans side, guac/avocado optional.

Tasted a bit bland but I think it definitely could be spiced up to be a 4 or 5! Very good base recipe for huevos rancheros :)

Soooooooo good!! Made exactly as specified. Used a griddle for the eggs and toasting the tortillas to speed up the process. Added shredded cheese on top of tortillas for the kids

wonderful, added lime juice to the bean paste. It is incredibly messy to eat, tried fork and knife and gave up and ate like a taco.

Excellent and filling breakfast. I made as directed, and used Tostitos salsa, which was super flavourful. Makes for a great and healthy breakfast.

Super tasty. I mashed the beans by hand rather than the food processor, which gave it some nice chunky texture. Next time I would use less cumin and more chili powder (or perhaps some jalapeños). I used more beans than it called for and still felt like the cumin was quite strong. I ended up scrambling my eggs (accidentally, lol!) and it was still really good.

Great! This was very tasty even without the corn tortillas. I substituted in a plain wrap and that was fine.

Delicious and easy. Had to add a little water to the black beans so it would make a purée. Added some Monterey Jack cheese as well Will make again

i didn't have black beans on hand but i had refried beans. Really good and prefect since I'm the only one who likes these latin breakfast in my family.
