Americanized it with some bacon & cheese. Also cranked it up to 400 for the last 15 minutes when I put the cheese in. Could have tripled the chilli powder to suit our taste. Great side.

I added some bacon for the taste - it was the main dish. Next time I’ll do it as a side dish for fish.

Very tasty! I used small baking dishes so everyone got their own dish, Oven time is also shorter that way. For the non vegans I added mozzarella.

Turned out great as a side dish, very light. Will need stronger flavor if it is the main dish, will probably add tomato paste or sauce next time. Will make it again.

This was so flavorful! My husband, who does not like eggplant, liked this. Although, the presentation is beautiful with the veggies sliced as pictured, I chopped the veggies this time and mixed them all together, and it was faster.

Sooooo gooood!!!! My husband and I are not vegan so we added parmesan but he hates egg plant and this was still a gold star! Yum! Yum!

I thought this would feel like dinner but it felt like a side dish. It was good, I added a vegetable bullion cube to the sauce and pour half of the sauce on top of the vegetables inside the dish before baking. I would make again with this change- toss the eggplant in olive oil, garlic, salt and pepper before putting in the baking pan

Super easy to make, and very tasty! Great for a basic ratatouille, and very possible to add other vegetables added to it: potatoes, jerusalem artichokes, fennel, etc.

Wonderful. Thank you so much for posting this recipe. I make something similar with sliced potatoes, tomatoes, and zucchini, but I'll love using eggplant and the tomato sauce.

Beyond delicious! I'm definitely saving as one of my favorites. While I didn't have the apple cider vinegar on hand, the recipe was still amazing without it. I enjoy stronger flavors, so I did add extra herbs de Provence, garlic, and basil. The sauce was SO simple and tasty - I think I'll start using the same ingredients for a fast pasta sauce!
Also, I did not watch the movie Ratatouille as I was eating this...but I should have!
