Great. We live in an RV so have to be aware of propane (cooking). I doubled the recipe. Will have it on toast one night, 2 nights as pot pie and freeze the rest for quick meals. Just have to have pie crusts to do pot pie again or for really quick meal on toast. I add about 1/3 tsp celery seed - saw that in different recipe and a smidge more thyme. Just saw the sage - might put a little in one of the frozen ones when reheat. Just made one pie first time - double crust - regular deli pie crusts. There are just 2 of us so will get a lot of meals out of this My honey, bless his heart, actually likes eating same thing over and over if it is something he likes.

I was nervous because the flavour of the sauce is a serious point for me and it may sound sick but the store bought ones are good but always make me feel guilty for eating. But this was amazing and I had to resist eating more, I used a bottom layer in a metal pie pan and the crust was sooooo good. Thanks for posting I would mention way sooner it makes enough for 2 pies but no regrets!

I modified it by adding a crust on bottom and I omitted the peas.

It turned out great! I made only half the recipe and added a potato to the vegetable mix. I also added 1/4 teaspoon of sage and went easy on the thyme. Very satisfying comfort food! My husband loved it!

awesome!!! best pot pie i have ever had! we eliminated the crust due to our health... but this is a keeper!!
