    I loved this! First cake made from scratch and it was perfect. It takes a lot of work to chop the carrots, and I didn’t have an electric mixer for the icing, but that’s my fault. The only thing I changed was adding heavy whipping cream to the icing because it was a bit too sweet for me. Other than that, it was perfection in a cake.
