  • 1 lb. lean ground turkey
  • 1 Tbsp. extra virgin olive oil
  • 1/4 tsp. cumin
  • 1/4 tsp. chili powder (1/8 tsp if you don’t like it too spicy)
  • 1/4 tsp. red pepper flakes
  • 1/8 tsp. coriander
  • 15 oz. black beans (organic, rinsed thoroughly and drained)
  • 15 oz. pinto beans (organic, rinsed thoroughly and drained)
  • 5 plum tomatoes (chopped and seeds removed)
  • 1 tsp. chili peppers (chopped, add more or like to your taste)
  • 1/2 cup frozen corn
  • 1/4 cup reduced fat Mexican blend cheese
  • 1/4 cup chopped fresh cilantro (for topping optional)

    Excellent starting point. Like the others, I added a LOT more spices. Also added a diced onion and diced bell pepper (3 colors, for the visual effect). Served with tortilla chips and a salad. Super good!

    Tasted good. Bland, so definitely add more seasoning. To be honest... Its really just a Mexican chilli with cheese melted on top. There is nothing to hold it together. When you plate it, it just spreads out like chilli.

    Excellent!!! Followed recipe, but might add some “extras” like sour cream & olives. Left out the “heat” as my husband is sensitive to that and it was still great.

    It seemed a bit bland to me even after doubling the spices. I added some salt and garlic and I put more cheese.

    Definitely double the spices! I also added some taco seasoning to mine and served it with a spoon of non fat Greek yogurt.

    I made the recipe exactly as it’s written and found it to be a bit bland but it definitely has potential to be really good. Next time I’ll try another reviewer’s suggestion of doubling the spices, which I think should do it.

    Really yummy! You do have to add additional servings of spices because the ground turkey needs extra flavor. I also added frito chips at the very end to give it some substance since it doesn't keep ya full very long.
