Description
Low in calories but high in flavor and protein, this casserole is a perfect healthy start to the day. The recipe is a Yummly original created by Sara Mellas.

- 1 scallions
- 8 sausage links (turkey or chicken, fully cooked)
- 2 cups mixed vegetables (like broccoli, peppers, asparagus, spinach)
- 1/2 cup plain greek yogurt (nonfat)
- 16 egg whites
- 1 tsp. salt
- 1/4 tsp. black pepper
- 6 oz. shredded mozzarella cheese (light, 6 oz. is about 1 1/2 cups)

Directions
- Preheat the oven to 350°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Mince the scallion and set aside.

Great recipe! But we used the full egg because the yolk has the flavor. I imagine with only the whites it would have been quite bland. Yummy!

Son liked it. A little bland but it’s easy to tweak. More meat more spices more cheese. I used 8 whole eggs. The yolk is where all the nutrition is.

I cheated a little and used frozen mixed veggies and a container of egg whites but that made it super easy for this beginner. It came out tasting great! I really like the guided instructions as well.

turned out great! I used an 8x12 pan instead and veggie sausage and everything was just fine. Will make this again for sure!!
