Made it last week. Had left overs. Making again tonight. Adding more veggies, mini potatoes, cherry tomatoes, yellow onion and the kitchen sink. And instead of sweet potatoes, I used butternut squash. High marks.

Tastes very nice considering how little effort it takes to prepare.
It's my go-to if I don't feel like cooking one day. I can whip it up quickly and not order any take-away

I’ve made this multiple times. It’s my husbands favorite dish. I love how versatile you can get with the veggies and it still tastes amazing every time

My favorite thing about this recipe is just how versatile it can be. It’s also a good way to use up produce. I used chicken sausage, Broccoli, sweet peppers, onion, sweet potato and apple and it was served over quinoa. It does need something to brighten it up though...maybe lemon juice or a vinegar based dressing or maybe kalmata olives. Will make again!

I used frozen veggies mostly and cut up some red and yellow peppers added some fresh garlic. Needed to cook about 40 mins because of frozen veggies

Great! easy and filling! I cooked for 40 minutes as the sweet potatoes needed longer and thought it came out great.

At first was a little skeptical with this recipe, but wow! Would it be wrong to make it 2 nights in a row? Chopped up fresh asparagus instead of sweet potato.

This was really good! I added some red onion because i had it, otherwise i made this by the recipe. I will definitely make this again.

It was great, but it definitely needs something more. It isnt a dish that stands by itself to make a complete meal.
I also added baby corn and cauliflower.

Was good for what it was. I would maybe do a side of brown rice for filler but if that’s not what you’re going for this is still good as is. My husband however said it was a “good once” meal so he didn’t take it to work, which I get.

Update: I changed my 4 stars to 5 stars it’s delicious even my 13 year old liked it. I didn’t add the extra seasoning just salt, pepper, garlic and garlic salt and I found that I needed to bake it longer than 20 minutes at 400•
