  • 1 1/2 lb. 85% lean ground beef
  • 2 tsp. Worcestershire sauce
  • 1 tsp. kosher salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. freshly ground black pepper
  • 4 slices sharp cheddar cheese (optional)
  • 4 hamburger buns (potato buns or brioche buns about 4 inches wide and 8 oz. total)
  • ketchup
  • iceberg lettuce (optional)
  • 16 chips (bread and butter pickle, or dill pickle chips)
  • 2 oz. potato chips (thin chips, regular, such as Lays, or salt and pepper, plus more for serving)

    Directions

    1. Preheat a grill for medium-high heat (400° to 500°F).
    2. Put ground beef in a medium bowl with Worcestershire sauce, salt, garlic powder, and pepper. Gently mix seasonings into beef with your fingertips, being careful not to compress or overwork the meat. Divide the mixture into 4 equal portions.
    3. Form each portion into a loose ball. Gently flatten each ball with your palms to form a burger about 1 inch thick and 4 inches in diameter. Set patties on a baking sheet or platter. With your thumb or the back of a spoon, make a dimple or indentation a scant 1/4 inch deep and about 1 1/2 inches wide in the center of each burger.
