  • 1 rotisserie chicken (meat removed and shredded, discard the skin and bones, or 1 lb boneless, skinless chicken breasts, cooked and shredded)
  • 1 cup kale (sautéed/steamed, frozen chopped kale is my go-to)
  • 1 cup sour cream
  • 2 cloves garlic (chopped)
  • 3 cups enchilada sauce (green chile, I like Hatch brand, a little less than 2 -15 oz cans)
  • 2 cups pepperjack cheese (shredded, can also use Monterrey jack)
  • 2 cups shredded mozzarella cheese
  • 3/4 tsp. salt
  • 1/2 tsp. chili powder
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. pepper
  • 1/2 tsp. cumin
  • 8 tortillas (Siete Siete grain free, Flour or corn tortillas will work also)
  • chopped cilantro (optional)
