Directions
- Preheat the oven to 350°F.
- Spray a 9x5-inch loaf pan with nonstick cooking spray. Set aside.
- Place the zucchini in a large mixing bowl and blot with paper towels to remove some of the moisture. Add the canola oil, brown sugar, granulated sugar, sour cream, eggs, and vanilla extract. Whisk vigorously until smooth and combined.

Very tasty, turned out perfectly. I waited closer to 20 minutes to remove the loaf from the pan and did not have an issue with the bread crumbling.

This Zucchinni bread recipe tastes great, but it all fell apart coming out of the bread pan. There was nothing I could do to hold it together. All pieces and crumbs so we just ate it with a fork. So disappointing as it sounded like a great recipe and I was so looking forward to bringing to a friends gathering.
