- 1 red bell pepper (or green seeded and chopped, about 1 cup)
- 2 stalks celery (chopped, about 1 cup)
- 2 Tbsp. fresh parsley (chopped)
- 2 Tbsp. chopped fresh chives
- 1 clove garlic (minced, about 1 teaspoon)
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 Tbsp. lemon juice (freshly squeezed)
- 2 tsp. sugar (add more to taste)
- ground pepper (to taste)
- salt (to taste)
- 6 drops Tabasco Sauce (or more to taste)
- 1 tsp. worcestershire sauce (omit for vegan or vegetarian option)
- 2 cups tomato juice (or 1 15-ounce can crushed tomatoes if you don't have tomato juice)

Great classic gazpacho. I doubled the peppers and cucumbers by dicing them to add some crunch and texture. Also put in a bit of dill. Put it in mason jars and ate it for lunch at work. Delicious.
