Wonderful! Without the typical apple pie spices, the apple flavor is subtle, but not washed out. I used a mix of Granny Smith and Empire apples, which gave a nice texture and flavor mix. The cake is moist and thanks to the 8 tablespoons of butter, it’s rich, but not too rich. I served it with crème anglaise sauce made with a few tablespoons of reduced cider. Great combination! The cake would also be great with a scoop of vanilla ice cream, or just plain... oh, and it’s very easy to prepare.

I have made this cake twice now, once with apples and once with peaches. So delicious, everyone said it's the best fruit cake they have eaten.
