    I added just a bit of oregano to the peppers/onions/sausages while they were cooking, and instead of flipping the egg I let it set, added the filling, and wrapped it up on the hob still so it all melted together. Also added 1tbsp mozzarella to the egg and 1/4 cheddar to the final filling mix (needed more calories, but wanted to keep it low carb). Added salt and pepper to taste and it was really good. Would definitely make again.
