- 1 sweet potato (medium, peeled and cut into 1" cubes)
- 3 carrots (peeled and sliced)
- 1 stalk celery (diced)
- 1 small yellow onion (diced)
- 1 clove garlic (minced)
- sea salt (or Pinch of Kosher, more or less to taste)
- 1/2 tsp. black pepper
- 1/8 tsp. allspice
- 1 tsp. paprika
- 1 bay leaf
- 30 oz. navy beans (drained and rinsed, optional, black beans)
- 4 cups vegetable broth (low-sodium)
- 14.5 oz. diced tomatoes (no salt added, *this is an optional ingredient)
- 4 cups baby spinach (loosely packed, optional, 2 zucchini, sliced)
- 1 Tbsp. virgin olive oil (extra-, optional, for serving, 1/2 teaspoon per serving)

My husband was skeptical because it was healthy but after smelling it cook all day he had two bowls and couldn’t quit raving about how good it was Thank you

It’s tasty! But it would have helped to know that you actually shouldn’t add the tomatoes until the beans are soft. In the video on the blog post, I saw everything go into the pot at once. My beans never got soft at all and the soup was ruined. I think it would have tasted great, though, had the beans cooked well.

If you’re special like me and don’t realize this is a crockpot or 2 hour stovetop recipe til 7pm the night you’re making it, here you go (it’s definitely less healthy this way, but still really good!)
I forgot the sweet potato, so I boiled 4 red potatoes til soft while I sautéed the other veggies in olive oil (quadrupled the garlic and didn’t add it til everything else was soft). I also added a tablespoon and a half of flour to the soft veggies and cooked it down in order to thicken the soup.
Added everything together with about 1/2 cup extra broth, brought to a boil then simmered for 15 min covered.
Spice wise went with crushed red pepper, garlic salt, paprika, thyme, black pepper, Cajun seasoning, and oregano :)

It is more of a base than a finished soup. I will make it again but add other seasonings, vegetables and maybe some tortellini.

This soup was surprisingly great, very flavorful! I modified it only slightly by adding red chili flakes, and 1/4 cup of apple cider vinegar. As others have done I used 1 can of lentil beans.i think the suggested bean would have been super hearty & filling, I’ll try the soup that way in the winter.

It was great a whole crockpot full double batch and froze in 2 cup bags for later and was great very tasty

lovely soup went a bit off topic on second time by adding bit of chilli and some preboiled rice which gives it some extra body. still amazing without.

I love soup so much that my parents call me the soup girl. I normally prefer puréed soups, but I was looking for something that might boost my immune system as I found myself sneezing today. This recipe looked delicious.
I made some changes according to the way that we cook in our household:
sautéed the vegetables in the oil for just a couple of minutes before adding spices until fragrant, then the broth, and I added more garlic, some ginger, and a little turmeric(for inflammation). I added just a half cup of dried lentils instead of the beans.

Loved this!
Used lentils instead of navy beans bc didn't have on hand.
Also ended up blending it to add a more uniform, creamy texture.

I did not slow cook this but did it on the stove top in a big boiler pot. I added Savoy cabbage as well. A very refreshing healthy soup

I was surprised how well the allspice worked on this recipe. I added a little bit of parmesan cheese on top and used yukon gold potatoes instead of sweet potatoes.
