This salad has become a staple in our house. We are watching our weight and this salad is great. I use chopped curly kale instead of parsley, lite olive oil, cherry tomatoes cut in half, pinto, black, navy or garbanzo beans and the salad is great! Took it to a party and everyone raved about it. Because the kale stands up to moisture, this salad lasts a week in the fridge.

Didn’t have the chickpeas or red pepper, added fresh mozarella and fresh basil instead with fresh tomato. Delish!

Love this recipe. I’ve remade it a couple of times already. I switched the chickpeas to pinto beans for personal taste. And used cilantro instead of parsley

So good!! I didn’t have peppers, but I threw in some cauliflower I had and it worked perfectly! A great one to throw in whatever fresh veg you have 😊 (I also added feta)

Tasted great. Very healthy. A little mild for my taste. Would recommend some additional seasoning.

I love this salad. Really easy to make, and I've substituted black beans for the chickpeas and still turns out great.
