Came out great! I did a couple small modifications
1- I toasted the chickpeas switch salt cumin and paprika till they started to pop
2- added some cooked chicken I had left over
3- before I threw in the quinoa I added a chicken bullion to the boiling water to give additional flavor
4- didn’t have red onion so used green instead
Great recipe, will be repeated!

I made a ton of this salad for a while. I was eating it daily and didn't get tired of it. I just kind of fell out of it, but Im going to make some again this week.
I prefer to use the Meijer Super Grains blend instead of single or tricolor Quinoa. The blend is mostly Quinoa, but has some millet and buckwheat mixed in.
The mixins make a huge change to the flavor by adding more nuttiness to the dish.
To simplify the process of making it each morning, I tried mixing the liquids as a dressing. The results were unexpected. I used a Dressing jar and shook them to mix them.
I put the results in the fridge after using some. After it cooled, I had a thick muck. My guess is that shaking the mix caused the lemon and vinegar to emulsify into the oil. I didnt think about it at the time, but it might have made a good spread.

I do this tossed with a homemade version of Olive Garden Italian dressing instead of the dressing in the recipe. Do about one decent handful of finely chopped parsley to taste. Can also chop some spinach up and toss it in for another healthy boost.

Seemed really bland, not sure what I did wrong. I want to love this. Noticed that when I rinced the Quinoa, it increased in volume. Measured it from the dry stage initially.

My husband doesn't like chickpeas so I used kidney beans instead. I added celery & dried cranberries to the salad. For the dressing, I added a tablespoon of dijon mustard. The salad turned out great! Next time I might add tofu.

Great I did make some substitutes according to what I had on hand and it still turned out great! Loved it

This salad has become a staple in our house. We are watching our weight and this salad is great. I use chopped curly kale instead of parsley, lite olive oil, cherry tomatoes cut in half, pinto, black, navy or garbanzo beans and the salad is great! Took it to a party and everyone raved about it. Because the kale stands up to moisture, this salad lasts a week in the fridge.

Didn’t have the chickpeas or red pepper, added fresh mozarella and fresh basil instead with fresh tomato. Delish!

Love this recipe. I’ve remade it a couple of times already. I switched the chickpeas to pinto beans for personal taste. And used cilantro instead of parsley

So good!! I didn’t have peppers, but I threw in some cauliflower I had and it worked perfectly! A great one to throw in whatever fresh veg you have 😊
(I also added feta)

07-29-2020, used tri colour quinoa, chopped cabbage, red onion, edamame, carrot. Followed the cooking instructions, quinoa was light and fluffy

I love this salad. Really easy to make, and I've substituted black beans for the chickpeas and still turns out great.
