  • 2 sweet onions (medium, diced, like Vidalia, Walla Walla etc. They have light coloured skin and a slightly flattened top and bottom)
  • 5 cloves garlic (minced)
  • 10 ounces mushrooms (package of, sliced)
  • 2 teaspoons fresh thyme (or 1 tsp dried)
  • 6 stalks celery leaves (removed and sliced)
  • 4 carrots (large, peeled and sliced)
  • 1 pound green cabbage (shredded or cut with mandolin)
  • 28 ounces diced tomatoes (or 2 16oz cans fire roasted, I use Muir Glen Organics)
  • 2.3 liters vegetable broth (fresh, my recipes are here or low sodium packaged vegetable broth)

    Delicious, filling, and no fat! I used only 1 can (14.5 oz) fired-roasted tomatoes and added 1 chicken bouillon cube (so not vegetarian) for additional flavor.
