Description
These esquites are exquisite! Esquites are a traditional warm Mexican corn-based snack served in a cup. Similar to the popular Mexican street food known as elotes (corn on the cob with cream, spices, and cheese), esquites combine the same flavors to make an easier-to-eat version without the cob. This version gives the recipe a makeover — just like Chef Gordon Ramsay does to the many restaurants in Gordon Ramsay's 24 Hours to Hell and Back.

- Melt the butter in a sauté pan over medium heat. Add in the corn, salt, pepper and chili powder and sauté for 3 minutes or until the corn is tender.
- Add in the green onion and lime and cook for 1 minute more while stirring.
- Remove the pan from the heat and add in the mayonnaise and cilantro. Taste and season with more salt and pepper if desired.
- Plate the corn in a bowl and top with the queso fresco and more green onions and serve warm.

Quite good, fast and easy - will make again. Tastiest with fresh corn but frozen works fine.
