  • 1 marinara sauce (recipe Simple)
  • 3 lb. ground beef (or turkey, cooked and drained, optional)
  • 15 oz. ricotta cheese (whole)
  • 3 large eggs
  • 1 cup grated Parmesan cheese

    LOVED It!! Minor tweak - cottage cheese instead of ricotta then squash, zucchini and mushrooms in place of meat.

    I froze two loaf pans for future eating. I also modified the recipe by using homemade hot salsa instead of marinara and venison burger with taco seasoning topped with pepper jack cheese instead of the mozzarella. Presto! Mexican eggplant lasagna. We’re having that for dinner tomorrow. Sample tasting was good and it will be better tomorrow.

    I think this was mainly my fault but eggplant was really difficult for me to cook. Maybe cause I’m not a very good cook 😂

    this eggplant was off the chain i notice most review said that the eggplant was a little under cook not sure if they cut it thick so i decide to cut it a little thin so it can be soft it turn out great even throw it took about and hour what i did was when it was ohmost done i cover it with aluminum foil to hold the heat in to alow it to get soft it work so try it that way. will make again :)

    Awesome flavor, the eggplant was a little under cooked, could have initially baked a little longer. Other than that, it was very good. I will make again.

    Fantastic, we loved it! So EASY! Waaay better than the egg plant Parmesan recipes where you have to fry every piece in bread crumbs, & Paleo friendly.We 1/2 the recipe for the two of us and I did 1/2 of the eggplant with the skin on and 1/2 peeled just to see. We liked both. I also used cottage cheese instead of ricotta -it was delicious. Definitely a new favorite! Note: I did sprinkle my favorite garlic salt on the egg plant before roasting on the convection setting in my oven, which was extremely fast.

    Good. But next time, peal eggplants, use only one for two people and cut recipe in half. Bake longer when roasting eggplant and also after building lasagna. 20 mins when roasting eggplant and 45 mins for second cook.
