  • 1 Tbsp. extra-virgin olive oil
  • 1 medium zucchini (chopped, optional)
  • 8 oz. sliced mushrooms
  • 12 oz. frozen spinach (thawed)
  • 1 cup frozen peas (thawed, optional)
  • 5 cups marinara sauce
  • 14 oz. extra firm tofu (drained and pressed)
  • 10 oz. hummus (tub roasted garlic, 1 heaping cup)
  • 1/2 cup nutritional yeast
  • 1/4 cup fresh basil (finely chopped, optional)
  • 1 tsp. salt
  • 1 tsp. garlic powder

    Amazing. Easiest lasagna ever and super tasty, everyone loved it. Note that the ingredients list in Yum is incorrect. It calls for two 14 oz of tofu.

    Very good lasagna my only question is although it tastes great, when looking at the ingredients needed in Yummly it calls for 14 oz Extra firm tofu however, when you tap on the directions, the ingredients listed on that page say 2-14 ounce Extra firm tofu so,I ’m not sure if Was supposed to use two packages of tofu I believe it’s a typo on the directions page because the video shows you breaking up just one package. You might want to fix that I only use the one to a cup of hummus

    delicious! added a little lemon juice to the "ricotta." added vegan mozzarella on top, next time I may add it between layers too. great recipe!

    Very good. Added broccoli in with veggies. Would like to try adding a vegan mozzarella to the cheese layer and also adding to the bake time a bit.

    Wow - really tasty with no cheese! The tofu hummus ricotta mixture is very good. I was eating that by itself before I assembled the lasagna. I used fresh spinach and no-boil lasagna noodles, which turned out a little chewy. I’d probably soak them first next time.

    It turned out a lot better then I expected and it was a lot easier then I expected too. The hummus tofu mix substitute was delicious!! I also used portobello mushrooms. I had cooked them with some vegan ground beef before hand and added them into the lasagna before I baked it

    this was perfect! I added Portabello Mushrooms as well Vegan cheese to each layer. I also used kale veggie burger mixed in with sauted mushrooms.
