  • 1 pie crust (Everyday, or gluten free crust of choice)
  • 6 eggs (For higher protein/lower fat, use 4 eggs + 5 egg whites)
  • 1/2 cup milk
  • 1 cup shredded cheese (mozzarella, cheddar, etc)
  • 1/4 cup grated Parmesan
  • 1/4 tsp. salt
  • freshly ground pepper (to taste)
  • 2 cups vegetables (spinach, sauteed mushrooms, diced and seeded tomato, sauteed onion and/or garlic, steamed broccoli, etc)
  • 1 cup cooked meat (chopped, optional, ham, bacon, sausage, etc)

    The flavor was gr8. i followed the recipe to a T., however, i had too much for thr pie shell. i will make it crustless next time.

    Wonderful. The proportions of vegetable to meat to egg to cheese is just right. I used pre made pie crust which shrank down some when prebaking so next time I will try to make my own and roll it out to be bigger in the pie pan.

    This was perfection. I used a store purchased gluten free frozen crust, fresh mushrooms sauteed in homemade Ghee, fresh spinach, leftover ham, cheddar and parm cheeses. House smelled amazing while this was baking.

    It WAS easy! After the holidays I had various veggies, some pie crusts and too many eggs leftover. This was the perfect answer. I didn’t have mushrooms or spinach, but like she said, just try some different ones. Sweet peppers, cherry tomatoes, a jalapeño to spice it up, and kale filled it out. I was going to make up a salad, but had some roasted potatoes that I warmed up to go with it. My husband was very pleased.

    Fantastic, easy recipe! I used turkey bacon, onion, mushroom, red pepper and garlic, and also added a few herbs (thyme, sage, and a little oregano) and it is SUPER yummy. Thank you so much!!
