  • 1 1/3 cups yellow onion (chopped)
  • 2/3 cup chopped carrot
  • 2/3 cup chopped celery
  • 2 Tbsp. minced garlic
  • 6 cups chicken broth (unsalted)
  • 6 oz. orzo (preferably whole-wheat)
  • 1 1/2 Tbsp. fresh oregano (chopped)
  • 1/2 tsp. kosher salt
  • 24 meatballs (cooked chicken, 12 ounces, such as Easy Italian Chicken Meatballs, see associated recipe)

    Converted to vegetarian and IP. Simmered two packages of Gardein meatballs in some vegetable broth (covered, 20 min.) At the end, quarter them and add to soup. Meanwhile, saute 1 diced large yellow onion (FP), 1 c julienned carrots, and 1 c diced celery in the IP with a tbsp olive oil and some vegetable broth. Add the garlic (go generous) at the end. Then add the remaining vegetable broth (two 32 oz cartons) plus 1 c water to the IP and add the orzo (half of a 1 lb pkg), generous oregano, S and P. High pressure 6 min. w quick release. Then stir in 1/2 c Parmesan cheese, generous garlic salt to taste, chopped spinach, and the meatballs.
