Directions
- Preheat the oven to 350°F.
- Spoon about half a can of the enchilada sauce into the bottom of a 9x13-inch baking dish. Set aside. Reserve the remaining sauce for a later step.
- Finely chop the yellow onion and bell pepper. Remove seeds from the jalapeño and finely dice. Mince the garlic.

My meal turned out great. Vary flavorful and the garnish added to the recipe enhanced the presentation of the dish. I will be adding this one to the weekly cook list. Minimal preparation and quick cook time.

This is a great basic recipe for the essentials I tripled the spice plus garlic powder and a splash of chili powder two cans of enchilada sauce and double the cheese

This is a great starter recipe. I'm always looking for ways to make family faves more feasible on busy days. It takes a lot of courage to post a recipe for the whole world to critique so thank you. I added a few more spices and was pleased with the outcome. This is a solid beginner recipe and is very easily built on.

Tasty and easy to make, although a little bland. Also, Yummly, don’t list the same ingredient twice on opposite ends of the ingredients list. Instead, say “two cans of …”.

my husband and 2 year old really enjoyed this. I did do it a little different from the recipe. my husband hates peppers so I used zucchinni instead. also I didnt have 2 jars of enchilada sauce so I used 1 jar and marinara sauce. I had lots of extra filling that I couldnt squeeze into the tortillas so I topped them with the remaining toppings before adding the cheese on top.

Easy enough to make and very flavorful! I accidentally got a red sauce that was a bit too spicy, but the whole meal made up for that. Add sour cream and avocado!

Substituted roasted chicken for ground beef and mixed the enchilada sauce with cheese for a queso consistency and was delicious!!!

the flavor was good, but my tortillas were not pliable and ugly. needs more than 2 cups of cheese

Added 2 tsp of garlic and it was very flavorful. A bit soggy so I think I'll use a bit less enchilada sauce in the pan and on top next time but overall very good and we all liked it! My 1 year old even approved!

These were super quick to make, given that your throwing the tortillas in microwave. This is just a personal preference I guess to slightly fry the tortillas prior to quick dipping in enchilada sauce before adding in whatever filling meat or meatless. This prevents the enchilada in my opinion fromb becoming to soggy and slightly dry. But of coarse addition of frying calls for added unhealthy version..But if your trying for quickness and dont mind all that then.. these were great im this regard.
