Absolutely delicious flavor, but TWO HOURS in the oven still didn’t cook the rice all the way through. Will definitely cook the rice before making this casserole again. I did try the extra liquid like other comments said, too.

Came out great but U did change my recipe just a little aftee seeing the hard rice comments. I added one piece of thigh, then added 2 cups of rice instead of a 1½ cup. Next i put in 3 cups of chicken broth and added 3 different cheese. Oh and the second baking cycle i cooked it for 30 minutes instead of 20 minutes.The only rice that was a little hard was the bits not covered with the cheese. Was a hit with me and the family.

It turned out GREAT! Others mentioned the rice didn’t cook all the way, so I cooked it on the stovetop in a cast iron pan with all the bacon, onions, etc. When adding the chicken broth, I added an extra 1/2 cup of water & cooked It on the stovetop for about 10 mins. Then, I put the chicken on top. Added a cheese blend & popped it in the oven. 30 mins covered; 20 uncovered & 2 mins broil.

Its good. Just the rice didn't cook all the way. it need an extra 25mins with about 1 and a half cup of water.

A delicious easy to make supper with lots of flavour. I would have cooked the rice a bit longer as there was still some crunchy pieces.
