This was my first time trying enchiladas in my life and I would like to say WOWWWW this app is a real help . Tasted very authentic . Of course I added seasonings to my liking such as cumin , onion and garlic powder . Along with bean and Spanish rice on the side . DELICIOUS

Used one whole rotisserie chicken, yielded 14 oz of shredded chicken (no fat or skin). Used flour tortillas instead of corn. Made the enchiladas the night before and added the rest of the enchilada sauce and cheese the day of. Couldn't be easier. They were a hit!

As a white father who cooks for my Hispanic family, I tend to spice it up a bit with chilis, cumin, ancho chili powder, and so on..

It was a good and simple recipe. I added about 1.5 tsp of cumin and a tsp of garlic powder to the chicken mix.

Instead of Mexican cheese use Asiago cheese block and shred with homemade red enchilada sauce, this one’s good
