So good! I have made this so many times and it’s so easy and hard to screw up. I use the 32oz (I save a cup or so and add it when I add the veggies) low sodium beef broth.

Yummily! Tender & juicy...I tweaked a bit, stir fried veggies in my seasoned iron skillet before adding to pot!

Pretty good. I was pleasantly surprised with the tenderness of meat after such a short braise. I will do less of a salt/pepper crust next time as the broth was a bit over seasoned (my fault).

Meat was still really tough but I cooked it on low for more time and that helped. It was also very dry but towards the end I added more broth and it was perfect

Cooking instructions (in oven or not in oven) was confusing. I assumed the 1 hour cooking time was on stove top in the Dutch oven, but the instructions were not clear on that.
didn’t want to chance, so I cooked our 4lb chuck roast in the Dutch oven, in the oven at 325 for 4.5 hours. Turned out awesome

Perfect! Very moist beef. I did have to add another cup of broth when I added the veggies. Family enjoyed it!

I love this recipe. It's quick (for pot roast), simple and delicious. My family commented on how good it smelled as it cooked and even my picky teenager had seconds. Minimal work for maximum payoff.
