Possibly the BEST soup I’ve EVER made! Maybe even the best I ever HAD! Really. Here’s the only tweaks: I used 1/2 red onion (because it’s all I had) and added a shallot. I used Garlic Better than Boulliin, and I coated the cauliflower with Garlic & Herbs olive oil before roasting for 30 minutes. I only used 1/8 t nutmeg to be safe. TOTALLY AMAZING.

Yummy soup recipe.
I swapped the butter for vegan butter and the parsley for cilantro and 😋.

So good! The key is to roast the cauli.... Gives a bit of a bbq'd character. Don't over do it though. Really easy and interesting soup. A splash of chardonnay (and in the soup) didn't hurt either.

It was very good. Next time I will use a 1/2 tablespoon of lemon juice. You can always add more but it was a bit to overwhelming for my taste. I also used bacon crumbles as a garnish. I will definitely make again
