Very easy to make. I did use more noodles because I could tell it would have a little too much liquid. Very rich meal, though.

It turned out so good! We added a little dollop of sour cream when we ate it and topped it with cilantro and green onions for garnish…. Definitely making again!
We had fresh juiced Concord grape juice with it.

This was super yummy! I doubled the recipe and had to change how I cooked it because my biggest skillet wasn’t big enough. Maybe can do it all in a very large Dutch oven next time. But, browned sausage and sautéed the onions. Cooked pasta according to the directions on the box. Mixed the rest of the ingredients (subbing Hatch green chilis for the jalapeños) minus the chicken broth and put it in the Dutch oven. Cooked at 400 in a convection oven for 20 minutes. Came out really good!

Turned out GREAT. Smash hit! I sliced up the tomatoes which added a nice texture and the green onion gave it a nice little crunch.

Great!! Not only do we love Mexican food..but this was such an easy way to use what I had available. Definitely going to make this again!
